Chicken and Waffles


Chicken and waffles are extremely easy and very delicious. For many, chicken and waffles are a rather odd combination, but I can assure you the combination works. I would say to at least give it a try before deciding. The ingredients list is truly minimal and if the batters are made ahead of time the cooking process can be done in about 10 minutes. I hope you enjoy this recipe.

FOR THE CHICKEN BATTER:

1 egg, beaten

1/4 cup whole milk

3/4 cup chicken broth

1 1/2 tsp. salt

1/2 tsp. pepper

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. dried parsley

1 cup self-rising flour

FOR THE WAFFLE:

2 cups all purpose flour

4 tsp. baking powder

1/2 tsp. salt

1/4 cup brown sugar

2 eggs, beaten

1/2 cup vegetable oil

2 cups whole milk

1/2 tsp. vanilla extract

FOR THE SYRUP:

1/2 cup of your favorite honey mustard

1/2 cup natural maple syrup

1/2 tsp. red chili flakes

1/2 tsp. salt

1/2 tsp. pepper

INSTRUCTIONS:

Both of these batters can be made up to 24 hours prior to cooking for convenience.

For the chicken batter, combine egg, milk, and chicken broth in a bowl and mix thoroughly. In another bowl combine flour, salt, pepper, onion powder, garlic powder, and dried parsley and whisk well. Next, mix the wet ingredients with the dry ingredients and combine. The batter should be fairly thin. The thicker the batter the more bready it will be. For optimal crispness batter should be on the thinner side of the spectrum. When cooking, simply dip tenders in batter (no extra flour needed) and fry in vegetable oil at 350 degrees until browned and crisp, about 8 minutes.

For the waffle batter, combine flour, baking powder, salt, and brown sugar in a large bowl and whisk to combine. In another bowl mix egg, oil, milk, and vanilla. Next, combine the wet and dry ingredients. The waffle batter should be thicker than the chicken batter. Remember, waffle batter tends to thicken upon resting, so if your batter is slightly thin it should thicken in the refrigerator. To cook the waffles, simply use your waffle iron as usual.

For the syrup, simply combine honey mustard, syrup, salt, pepper, and chili flakes and mix well.

After the chicken and waffles are plated, top the dish with chopped fresh parsley and the honey mustard maple syrup.
